Transform proposes a format that is adapted in each edition according to the place in which it is located or the themes that want to be explored.
We seek to build jointly images of the future, leveraging the collective gastronomic memory.
It invites agents with the potential to transform the gastronomic system (you) to participate.
Open pathways for dialogue between agents that normally would not sit at the same table.
It equalizes the social hierarchy of the dialogue, as manual skill is your presentation card in this table.
After transforming foods for a chunk of time, we kick off the conversation.
The goal is to describe desirable yet plausible futures, exploring the weight of the past, what we consider brings the push of the future, and, finally, factoring in the pull from the future.

Preparing food for cooking requires repetition, little effort, but a lot of being present.
Using our hands for a repetitive task serves as an excuse to gather and create a familiar and intimate space. An invitation to be in the moment, until the task ends. Being present as an individual in the collective sets the table for dialogue and joint reflection.
